Veg fried rice

 A quick and delicious street-style Veg Fried Rice made with crunchy vegetables, soy sauce, and aromatic seasonings.

🛒 Ingredients (Serves 3-4)

 

Grains & Oil

 • Boiled Rice – 2 cups (pre-cooked and cooled)

 • Oil (neutral, high heat) – 2 tbsp

 

Aromatics

 • Garlic – 1 tbsp (finely chopped)

 • Onion – 1 small (finely chopped)

 • Ginger – 1 tsp (finely chopped)

 • Green Chilies – 1 small (finely chopped)

 

Vegetables

 • Carrots – ¼ cup (finely chopped)

 • Cabbage – ¼ cup (finely chopped)

 • Beans – ¼ cup (finely chopped)

 • Red Capsicum – ¼ cup (finely chopped)

 • Yellow Capsicum – ¼ cup (finely chopped)

 • Green Capsicum (optional) – ¼ cup (finely chopped)

 • Green Peas – ¼ cup

 

Condiments & Spices

 • Soya Sauce – 1 tbsp

 • Vinegar – ½ tsp

 • Salt – To taste

 • Black Pepper – To taste

 • Water – A splash for steaming

 

For Garnish

 • Spring Onions – 2 tbsp (chopped)

Cooking Time & Induction Levels

 • Total Cooking Time: ~15 Minutes 



👨‍🍳 Cooking Instructions (Induction Stove Optimized)

 

Step 1: Heat the Pan & Oil

 1. Heat 2 tbsp oil in a wide pan or wok at 1500W.

 2. Swirl the oil around to coat the pan evenly.

 

Step 2: Sauté Aromatics

 1. Add 1 tbsp chopped garlic and sauté for 10-15 seconds (do not brown).

 2. Add chopped onion (1 small), ginger (1 tsp), and green chilies (1 small).

 3. Stir-fry at 1300W for 30 seconds.

 

Step 3: Stir-Fry Vegetables

 1. Add carrots, cabbage, beans, red capsicum, yellow capsicum, green capsicum (if using), and green peas.

 2. Stir-fry at 1500W for 5 minutes. Keep stirring to prevent burning.

 3. The vegetables should remain crunchy, so do not overcook.

 

Step 4: Add Rice & Seasonings

 1. Spread boiled rice (2 cups) evenly over the vegetables.

 2. Sprinkle a pinch of salt and black pepper over the rice.

 3. Drizzle 1 tbsp soy sauce and ½ tsp vinegar on top.

 

Step 5: Toss & Steam

 1. Toss the rice gently using a spatula. If tossing is difficult, lift and fold the rice instead.

 2. Add a splash of water and quickly cover with a lid.

 3. Let it steam at 900W for 1 minute to allow flavors to blend.

 

Step 6: Final Toss & Garnish

 1. Remove the lid and give it one final toss at 2000W for 30 seconds.

 2. Sprinkle chopped spring onions (2 tbsp) on top.


🍽️ Serve Hot!

 • Plate the fried rice in the center as a mound to retain heat longer and for a beautiful presentation.
