Egg bhurji


🛒 Ingredients (Serves 3-4)

 

Egg Mixture

 • Eggs – 3

 • Milk – ¼ cup (113ml)

 • Salt – a pinch or two

 

Vegetables & Herbs

 • Onion – 2 small (finely chopped)

 • Tomatoes – 2 (finely chopped)

 • Green Chilies – 2 (finely chopped)

 • Ginger – 1 inch piece (finely chopped)

 • Coriander Leaves – ½ bunch (chopped)

 

Spices & Seasoning

 • Turmeric Powder – ½ tsp

 • Red Chili Powder – ¾ tsp

 

For Cooking

 • Vegetable Oil – 2 tbsp

 

For Serving (Optional)

 • Pav (bread rolls), Roti, or Toast

 • Butter (for toasting bread)

Cooking Time & Induction Levels

 • Total Cooking Time: ~20 minutes

 • Induction Wattage Settings: 700W, 1100W, 1300W, 1500W

👨‍🍳 Cooking Instructions (Induction-Stove Optimized)

 

Step 1: Prepare the Egg Mixture

 1. Crack 4 eggs into a bowl.

 2. Add ¼ cup milk and a pinch of salt.

 3. Whisk until fully combined.

 

Step 2: Prep the Vegetables

 1. Finely chop onions, tomatoes, green chilies, ginger, and coriander leaves.

 2. Set aside.

 

Step 3: Fry the Onions & Chilies

 1. Heat 2 tbsp vegetable oil in a non-stick pan at 1300W.

 2. Add chopped onions & green chilies and sauté for 5 minutes until onions turn translucent.

 

Step 4: Add the Spices

 1. Add chopped ginger to the pan and stir for 30 seconds.

 2. Sprinkle in ½ tsp turmeric and ¾ tsp red chili powder.

 3. Fry for 5 minutes at 700W, ensuring the spices are evenly mixed.

 

Step 5: Cook the Tomatoes

 1. Stir in chopped tomatoes and mix well.

 2. Cook at 1100W until tomatoes soften and turn into a pulp-like consistency (~5 minutes).

 3. Add a little water if needed to create a thick sauce-like texture.

 4. Stir, cover, and simmer at 900W for 10 minutes.

 

Step 6: Cook the Eggs

 1. Reduce the heat to 700W and pour in the whisked eggs.

 2. Stir continuously for 2-3 minutes until the eggs start to scramble.

 3. Continue cooking for another  7 minutes, stirring occasionally.

 4. Add chopped coriander leaves and mix well.

 

Step 7: Serve

 • Serve hot with pav, roti, or toast.

 • Optionally, toast pav or bread with butter at 1500W until golden brown.
