Shakshuka - Poached eggs in Tomato sauce
Ingredients: • 1 tablespoon olive oil • ½ medium onion, diced (approximately ½ cup) • ½ red bell pepper, seeded and diced (approximately ½ cup) • 2 cloves garlic, finely chopped • 1 teaspoon paprika • ½ teaspoon ground cumin • 1/2 teaspoon chili flakes (adjust to taste) • 1 ¾ cups (420 mL) whole peeled tomatoes with their juices, crushed • 3 large eggs • Salt and freshly ground black pepper, to taste • Fresh cilantro and parsley, chopped, for garnish Instructions: 1.
